Welcome to my portfolio. From experimental passion projects to commissioned work for clients, I’ve had the opportunity to create a variety of projects for this dynamic industry. Chef Zach has over 10 years experience in providing services for families, private parties and high-volume restaurants, making weekly meal plans, inclusive of Whole 30, Vegan, Raw Vegan, Paleo, Keto, Blue Zones and other health based, healing, food diets.
In December 2009, Chef Zach was certified as a raw food teacher, coach and chef, specialized in creating personalized dietary meals, using culinary and medicinal herbs.
In 2010 Zach was hired as chef and chocolatier at the Cacao Tree Cafe in Royal Oak Michigan, where he had a hand in making many of the desserts and menu items.
In September 20014, Zach started the organic lunch program at the Steiner school in Rochester, Michigan.
Between April and October 2016, Chef Zach’s curriculum includes being a travel chef for a Chicago Bulls NBA player’s family, also supporting the athlete’s participation to the 2016 Olympic Games in Brazil.
Since then, Chef Zach continued working with several families in the Metro Detroit area, accommodating each family member’s distinct dietary restrictions and serving custom breakfast, lunch, dinner, snacks and dessert. Food items include typical favorite dishes, transformed into their healthy, nutrient rich, versions, such as: gluten free bread, grain free pizza and bagels, ground lamb and cauliflower moussaka, rolled cabbage with quinoa and grass-fed ground beef, empanadas, tacos, ravioli, pierogis, lasagna, raw vegan chocolate, Paleo chocolate chip cookies, vegan ice cream and many other delicious meal options.
